What you're tasting

Liverpool has been in the works for months, and so has the menu. Our chefs have been developing dishes for a city audience and there is now a shortlist worth putting in front of people. What it hasn't had yet is a room full of people eating it.

That's what this night is. Six dishes from the proposed Liverpool menu, served at Oxton, before anyone in the city gets near them. Each person picks three. Same kitchen team, same standards, dishes that are still being decided on. You're getting them first because you asked to be told first.

£25 per person, or £30 with a glass of house wine. Booked and paid for online when you reserve. Anything else you drink on the night is ordered as normal.

Feedback goes straight to the kitchen. Nothing here is signed off. What you think of a dish genuinely affects whether it makes the final Liverpool menu.

One night and that's it. After Thursday the dishes go back to the kitchen to be worked on. No repeat dates.
